Strawberry pie recipe

You GUYS! You HAVE to make this pie. Right now. Seriously, because strawberries are in season and they make it so delicious!! It would be a great pie to bring to a family gathering or 4th of July.

4 cups water
1 1/4 cups sugar or monkfruit
1 teaspoon salt
3/4 cup cornstarch or arrowroot
1/2 cup cold water
1 3 oz. box strawberry gelatin
4 cups clean, hulled, and quartered fresh strawberries
1 9 inch baked pie shell (you can make your own or cheat...like me...)
Whipped cream or cool whip
1. In a medium saucepan, combine 4 cups water, sugar and salt and bring to a boil over medium heat, stirring well to dissolve the sugar.
2. Mix the cornstarch with about 1/2 cup cold water to make a thin paste, be sure to dissolve the cornstarch!! This is of EPIC importance.
3. Stir the paste into the syrup, and continue stirring until the mixture thickens and turns clear. Make sure there are no white bits hanging around. This is your arm workout for the day, make it count!
4. Once your mixture is cool, fold your strawberries into the mixture. Pour the goodness into the prepared pie crust.
5. Refrigerate the pie for at least 1 hour. Then, this will tell what kind of person you are... you won't need an enneagram after you answer this question. You can either pipe whipped cream on your beautiful pie, or you can dollop a spoonful of cool whip. Whichever road you choose says a lot about you..
Personally, I'm a dollop kinda gal.
