VEGETABLE BEEF SOUP

First, let me state that you cannot mess this soup up. There is no failure in vegetable beef soup!

Meet your very informal cast of characters...

I say informal because I believe this soup can be made with pretty much anything in your pantry. Here are the things I typically add, but don't feel tied to these ingredients.

1 lb ground beef

Beef Broth (or vegetable)

Tomato sauce

diced tomatoes

green beans

corn

garlic

onion

carrots

potatoes

salt, pepper, Italian seasoning and Worcestershire


Any canned or frozen vegetables could easily be added. In the summer, I love to grow fresh okra and cut it up in this soup. In life's busier seasons frozen veggies make this soup so easy to make after a long day!


We use a dutch oven, which I think really adds to the flavor!

Just brown your beef, we use this awesome meat masher from Amazon. I will try to link it below.



Then add your onion and garlic, let simmer for a few minutes until your onions and garlic are translucent.




Then add the rest of your ingredients. Let your soup simmer at least 30 minutes until carrots and potatoes are cooked through.







Every time you walk by your soup take a sip...ok not every time, and thank your dog for the moral support..



I like to serve this soup alone, but if your family feels like they need something a little more I think it's awesome served with a grilled cheese, or my husband's favorite a cheese quesadilla.
